Bright, crunchy, delicious salads really make a meal. Whether as a start to a meal, an accompaniment or sometimes, the actual meal. The trick to making them good is the perfect combination of flavour and texture. Salads needs crunch, tang, a hint of sweetness and a good hit of seasoning.
This Spinach & Cherry Tomato Salad is easy to put together and combines really flavourful ingredients. Sweet cherry tomatoes, crunchy salad leaves, delicious cheese and the slivered onions, soaked in vinegar really add a fabulous surprise in every bite.
This salad is a great base to play with and you can switch up the seasoning or add or remove an ingredient. The cheese we like here is fresh mozzarella but in a pinch, Feta is great to. It will change the flavour but that’s alright. It will still be a delicious salad. The amount of lemon juice you use is up to you really. Some people like a whole lot and others just a touch. We suggest starting with the lower amount and increasing it if you prefer. Follow the same principle with the salt.
Spinach & Cherry Tomato Salad
Ingredients
1 bunch Baby Spinach
1 cup Arugula
1 cup Cherry Tomatoes
1 small Onion, thinly sliced
1 cup Bocconcini, fresh Mozzarella (If you can’t find either of these cheese, you could toss in cubes of Paneer or Feta)
1 tbs Lemon juice, freshly squeezed
2 tbs extra-virgin Olive Oil
1/2 tsp salt, or more you like
1 tsp Vinegar
Directions
Leave the thinly sliced onions to soak in the teaspoon of Vinegar while you construct the rest of the salad.
Clean the spinach and arugula, halve the cherry tomatoes, chop your cheese into small chunks and add everything to a large bowl. Remove the onions from the vinegar and add them to the bowl as well.
Stir together the olive oil, salt and lemon juice and pour over the salad and toss everything together.
Garnish with a little freshly cracked pepper and a few chunks of cheese before you serve.
