Quite different from the well loved, crisp clusters of golden delicious Onion bhajiyas, these onion rings have a little magic of their own. The delicious sweetness of the onions, enveloped in a little puff of crisp yellow gold batter, made special with the addition of unexpected masalas, great new addition to the monsoon rotation of deep fried snacks.
Masala Onion Rings
Ingredients
1 - 2 large Onions, cut into rings
1 cup + 1 tbs Flour (150 gm)
2 tsp Baking Powder
1/2 tsp Salt + More to taste
1 cup Soda water
1/2 tsp Turmeric powder
1/4 tsp Chili powder
1/4 tsp ground Ajwain (optional)
1 - 2 tbs fresh Coriander, chopped
Oil for frying
Directions
Whisk together the flour, baking powder, salt and soda to form a batter. Add the turmeric, chili powder, ajwain and coriander and whisk them in.
Heat the oil in a wok or kadhai. Coat a few onion rings in the batter and carefully place in the hot oil and deep fry them till they’re a golden yellow.
Toss all the onion rings with a little salt if needed or some chaat masala if you like.
