Cool winter mornings bring with them cravings for warm, comforting breakfasts and while Upma, Poha, Dosa and Idli are fantastic, they also take just a little more time than most of us usually have. And sometimes a cozy bowlful of something a little sweet and comforting goes down so well.
While porridge fits that bill perfectly, it has a decidedly unsexy look and texture that many can’t get past. What we really need is a sexier version of porridge that has all the wholesomeness, warmth, comfort intact but is dressed up and brings a little oomph to winter mornings.
When we were younger, porridge would be made tasty by adding sugar and a large pat of butter melting over the top. This sexy version of porridge has all that flavour without even a hint of butter in the bowl. Using regular, quick cooking oats and adding a couple of key ingredients, porridge can be transformed. And the magic ingredient for this transformation is a generous pinch of salt per serve.

Porridge You’ll Crave
(Serves 2)
Ingredients
1 cup quick cooking Oats
2 cups Water or Milk or a combination
2 generous pinches of Salt
1 tsp ground Cinnamon
Toppings:
Fresh fruit such as strawberries, bananas, pears
Stewed fruit or a fruit compote
Nuts like almonds, pistachios, walnuts
Cream for a super luxurious bowl of breakfast
Sweeteners such as sugar, honey or maple syrup
Directions
Bring water and salt to a boil over medium -high heat. Add the oats and cinnamon and stir for about 2-3 minutes. Your porridge is ready to be served with any combination of toppings you like.
Note: You could add the sweetener to the porridge while cooking and top up with a little more if you like while serving.
Microwave directions: Add oats, salt, cinnamon and water/milk to a microwave proof dish. Microwave for 1 minute on high. Stir and microwave for another 30 seconds to a minute. Serve with toppings of your choice.

Love oatmeal in the morning and have been eating it for at least the last 15 years. We prepare a large mixture of oatmeal, nuts, dried fruit and store in a glass container to use everyday. We cook it in the microwave for about 1.5-2 minutes, then add banana, fresh/frozen fruit, milk and a teaspoon of roasted and ground flax seed. Delicious, keeps you full until lunch. Even travel with the mixture.
