Looking for a last minute recipe this festive season? This quick and easy Coconut Barfi recipe will set you up perfectly for Diwali, Christmas or just about any occasion that calls for sweets. Lay a plate out for visitors popping in or make some to give to your friends and family.
They are absolutely delicious and with a lovely layer of dark chocolate covering the tender coconut barfi, it’s really hard to go wrong. We think these taste almost like a better version of a Bounty bar.
Coconut Barfi with Dark Chocolate
Ingredients
1 Coconut, grated
1 can of Condensed Milk (A little less if you don’t want it very sweet)
200g Paneer, crumbled or grated
150g Dark Chocolate (optional)
Directions
Using all except around 3 tbs of the condensed milk, add the condensed milk and the grated coconut to a non-stick pan and cook over a low heat for about 5-10 minutes or until the mixture starts to leave the side of the pan.
Add the Paneer and mix well. Cook over low heat till the mixtures starts to leave the side of the pan.
Spread the mixture onto a plate and place in the fridge to cool.
Melt the chocolate in a double boiler or microwave (1 to 1.5 mins, stop and stir every 30 seconds). Pour over the Barfi. Allow to cool but not completely set. Slice into squares or diamonds before putting back in the fridge to set completely. Slicing them before they completely set will make for a smooth, un-cracked chocolate top…something we learned the hard way.
Note: You could make Laddoos instead of Barfis. Oil your hands and roll the mixture into small laddoos. Dip them in the chocolate using a tooth pick and allow to cool. You could sprinkle a little ground pistachio over the top of each laddoo / Barfi for a hint of pretty colour.
