Chai Gingerbread

We received a delicious little pre-Christmas present from the fantastic Asha Gupta. Delicious gingerbread cookies, wrapped in the recipe for those very same, wonderful, chai flavored cookies. The cookies were delicious, crunchy top, with just the perfect amount of plumpness in the bite. The addition of the chai masala is such a simple but wonderful twist on a traditional gingerbread recipe. Oh so fragrant! Redolent with spices, these cookies smell like Christmas.

Bake a batch of these and enjoy the bliss of your house smelling heavenly for the next couple of days.

Chai Gingerbread

Ingredients

2 cups Flour
1 tsp Baking Soda
1/4 tsp Salt
2 1/2 tsp ground Ginger
1/2 tsp ground Cinnamon
1 tsp Chai Masala (Everest, MDH or homemade mix of cardamom, cloves, black pepper, nutmeg)
1/2 cup Oil (Canola preferably)
1/4 cup molasses (Substitute with honey, maple syrup or dark corn syrup)
1 Egg
1 cup Sugar
1 tsp Vanilla extract

Directions

Sift dry ingredients except for the sugar. Set these aside. Combine the wet ingredients with sugar and whisk. Slowly stir in the dry ingredients into the wet. Let the mix sit overnight.
The next day, preheat your oven to 175°C. Shape into cookies on a baking tray and bake for 10 minutes
