Alphonso Mango in a Sabzi

Alphonso mangos in the summer make the heat worth suffering through. They are just that delicious. These mangoes inspire so much love and loyalty, you’d think they’re a favorite sports team. Debates about Alphonso Vs. Langda Aam rage on every summer and personally we’re happy to have that internal battle too. It just means more mangos to eat to prove to ourselves which ones are the best.

This intense love for Mangoes made us curious for even more ways to enjoy them besides just eating them in their pure, ripe glory. We stumbled upon this wonderful Marwari recipe that lets you enjoy the sweet delicious fruit on its own and then instead of getting rid of the peel, you turn them into a meal. Who would’ve thought of an Alphonso Mango in a Sabzi but here you have it.

This recipe for Aam ke Chilke ki Sabzi from Surabhi Bhandari is a tart, fresh and delicious dish with the barest hint of Alphonso flavor and sweetness running through it. The smoky cumin, the tart mango powder and the excitement of the new and interesting - you have got to try this dish!

Aam ke Chilke ki Sabzi

Ingredients

Peel of 4 ripe Mangos (preferably Alphonos), Cut in strips
Pinch of Hing (Asafoetida)
3/4 tsp Turmeric powder
1 tsp Chili powder (more if you like heat)
1 tsp Coriander powder
1/2 tsp Amchoor powder (Dry Mango Powder)
Salt to Taste
1 tsp Cumin seeds
1 tbs Oil for cooking
 
Directions
 
Pressure cook the ripe Mango peel with a pinch of salt and turmeric powder and just enough water to cover. 1-3 whistles are enough. Once you open the pressure cooker, add the turmeric powder, chili powder, coriander powder and more salt if needed and cook for a few minutes.
Heat some oil in a kadhai and add a pinch of hing and the cumin seeds. Let the cumin seeds pop and roast for about 30 seconds. Add the cooked mango peel to the oil and cook for 3-4 mins.
 
Serve with hot chapatis and daal.
